After leading the Shogun restaurant to acclaim, sushi chef Takashi Gibo has opened his own restaurant on the hip market street in downtown Salt Lake City. Takashi is a restaurant dedicated to the unique flavors and textures of sushi and sashimi. Using only the freshest fish, chef Takashi creates a tempting array of dishes that ranges with season. Often recommended are the Sunshine roll and Beatle’s homage’s the Strawberry Fields roll, and the Yellow Submarine roll. Located a little of the beaten path, Tsunami is a local favorite and hidden gem, and you should definitely fit Tsunami into your day about town. If you are interested in sashimi, try the spicy yellowtail or milder king salmon. Octopus, eel, and sea urchin offer daring alternatives. The Lush roll of tempura shrimp, spinach, smoked salmon and spicy sauce; or the Fire Breathing Dragon roll of crab, avocado, eel, ebi, and tobikko, will definitely make your mouth water, and palms sweat. Ichiban Sushi is nationally recognized for artful cuisine as much as for owner Peggi Whiting's status as the first white female to become a sushi chef under Master Inou's teaching. She prides herself in keeping Ichiban Sushi away from mainstream Japanese cuisine as much as possible. Items such as the tempura fried Silver Lake roll with eel sauce and the Death roll (spicy soft shell crab with radish sprouts) nicely compliment the hot kitchen's seafood soba, teriyaki, tempura, and an unusual squid appetizer. Regulars of Ichiban are rewarded with their own pair of chopsticks labeled, and kept on the wall behind the sushi bar.

A Salt Lake favorite, Ginza always puts the customer first, going as far as naming a sushi specialty after one-the Miya roll is barbecued eel and avocado. Other favorites are the Marz roll and Green Eggs and Ham made with yellowtail and wasabi flying fish eggs. In addition to the stylish sushi bar, Ginza, named after owner Tetsu Abe's hometown in Japan, serves authentic Japanese cuisine beyond the average teriyaki and tempura.

Located in the southern part of the Salt Lake Valley, Suehiro is known for its authentic Japanese food and extensive sushi choices. Beyond the California roll and a spicy tuna handroll, Suehiro's most popular rolls are the Crystal Shrimp and the Confidential-fried shrimp in a seaweed roll topped with raw sashimi and spicy crab. For the sushi expert take advantage of the all-you-can-eat sushi bar. Guests will also find a comprehensive selection of tempura, teriyaki, katsu, and sukiyaki and a variety of combination dinners.

Mikado's downtown location draws just as many business people as tourists to its spacious dining areas. An all-you-can-eat lunch sushi bar and half price rolls during the weekdays account for the large customer base. Most popular are the California roll and the Fugisami roll with spicy tuna and fish eggs. The Red Dragon roll made with king crab, avocado, spicy tuna, flying fish eggs, and shrimp is another exciting choice.

In the tradition of many restaurants found in Japan, Kyoto prepares a homemade soy sauce to be served specifically with their sushi rolls. This is just one of the special touches Kyoto's recently hired sushi chef brings to the restaurant in addition to his 40 years of experience in Japan. Specialties are the Tekka Maki made with seasoned rice and raw tuna and rolled in seaweed or the California Maki with seasoned rice, crab meat, cucumber, and avocado. While there try Kyoto's Gyoza, a Japanese-style pot sticker and enjoy the authentic and relaxing atmosphere.

Blind Dog Grill's sushi bar is a Park City favorite with locals and tourists. It's no wonder because some of their rolls sport names reflective of the town. The Jupiter Access roll (a run at one of the local ski resorts) is an inside-out roll with tempura shrimp and spicy tuna. The Prospector roll (reminiscent of Park City's silver mining heritage) contains blue crab, spicy tuna, and avocado. Steak, seafood, and pork are plentiful on Blind Dog Grill's regular menu so be assured there's something for everyone here.
