The simplest vegetarian dishes burst with tantalizing flavors when spices, herbs and fresh ingredients are combined according to age-old recipes or exciting, innovative variations found in popular contemporary cuisine. Area restaurants are serving up healthy menus that glitter with variety and imagination. Their culinary collections feature food from mama's Italian kitchen, papa's Greek taverna, and south of the border Mexican specialties as well as bright, bold Indian and Asian offerings. Meatless meals are a big hit in metro-Denver.

Masalaa provides patrons with a trip to the exotic Indies while in an unassuming restaurant. Masalaa’s food options include over 120 options, even foodies will have a tough time trying to decide what to try next. With a wide array of breads, salads, entrees, Indo-Chinese, and rice options the menu seems endless. Some options can be made Gluten Free and everything on the menu is vegetarian. This restaurant provides Indian food lovers with new options and also some of their old favorites. Local favorites are items like Saag, Vegetable Korma, Various Uthappam choices, Dosas dishes, and Lemon Rice (many other Rice items are available). The menu has a whopping eight dessert choices most are sweet milk based to please the sweet tooth in everyone.

Wolfe’s BBQ has been a Denver favorite for over 20 years. The owner himself freely admits that without the BBQ-Tofu on the menu the restaurant would have gone out of business over 10 years ago. Wolfe’s is one block away from the state capital so it attracts a wide range of patrons, most times you will see a mix of suits and tattoos. This is a perfect place for those non meat eaters and carnivores to come together for a good meal. Vegetarians can dine on BBQ-Tofu, vegetarian baked beans, carrot salad, and fruit salad. Wolfe’s also features some amazing pies for dessert. Vegetarians can now have more then just salad they can have a dripping with sauce BBQ meal.

A family-owned, Denver landmark-in business for more than thirty years-the Blue Bonnet has a hot menu with a variety of vegetarian specialties to keep the most eclectic group of diners happy. Vegetarian dishes appear in red on the menu. No lard is used in the preparation of the bean dishes. Veg-only Tamales, Guacamole Tostados, Cheese Enchiladas and massive Smothered Bean Burritos are bathed in a vegetarian red sauce that fires up the flavors of each tasty dish. Mexican pizza and quesadillas spiced with sautéed onions, tomatoes, jalapenos, beans and cheese turn ordinary appetizers into a veritable veggie fiesta. A full bar offers award-winning Margaritas, colorful alcoholic and non-alcoholic concoctions, as well as a bountiful array of bottled and draft beer. The sleek lines of the bar and cleanly sculpted shapes of the booths and furnishings make this Italian eatery a feast for the eyes. Stretching toward the back of the dining area, appetizing evidence of the imaginative menu decorates every table. While not vegetarian by majority, there are a number of sumptuous appetizers and entrees that fit into this special category. Buttery bruschetta with fontina and roasted asparagus is topped with garden-fresh tomato and basil. The fontina is also found on the Portabello Pizza flavored with roasted garlic and truffle oil. Penne Telefono combines lightly fried eggplant, fresh mozzarella and garlic with rich, red plum tomatoes. Artfully simple, linguini is tossed with basil pesto, sun-dried tomatoes and pine nuts. White bean and roasted red pepper ravioli is painted with brown butter, sage and balsamic syrup. Garlic, chili peppers, kalamata olives, tomatoes and ricotta come together in an outstanding Penna Al Arrabiatta. The lasagna is pasta-less, combining eggplant, roasted tomatoes, spinach and smoked mozzarella. An extensive wine list rounds out the meals served from this delightful "colorful kitchen."

Delicate combinations of spices and herbs flavor the food, and India's chefs bring out the best in each and every traditional recipe. It's a jungle in here! But the delightful menu soothes diners by delivering delicious taste treats made from scratch following traditional Lebanese and Middle Eastern recipes. Appetizers are served in portions generous enough to make a meal. Hummus, a delicate mingling of garbanzo beans, garlic, lemon, sesame, spices and olive oil, is a house specialty. Grape Leaves enfold scallions, parsley, tomato, rice, lemon juice, olive oil and spices. The rich, full-flavored lentil soup arrives with a juicy lemon wedge. The Pita Jungle Sampler is a colorful platter that delivers a variety of mouth-watering delights: the slightly smoky charbroiled eggplant of Baba Ghannouge; Lubieh Bizzyet's blending of green beans and tomatoes; the minty yogurt mix Lebni; Moujaddara, fresh lentils cooked with herbs; garlic dip; feta cheese; a puff pastry filled with spinach; grape leaves; Falafel dressed with Tahini sauce and Tabbouleh, thick with parsley, tomatoes, scallions, cracked wheat, mint, lemon, olive oil and spices. In the evening, soft light gives the restaurant a restful glow. No preservatives, chemicals or artificial ingredients are used in the food preparation. All vegetarian selections are free of animal products except those offered with optional cheeses. Dishes are prepared with Celtic sea salt from Brittany in France. Only aluminum-free cookware is found in this kitchen. A favorite vegetarian choice is the Tempeh Scaloppini, seasoned cutlets sautéed in white wine with onions, mushrooms, herbs, lemon and garlic.
