Although the name might throw off some purists, Simon's Sushi is indeed run by an Asian chef (and although the oddly-monikered Simon Chuang is Taiwanese, not Japanese, his training is as orthodox as it comes). Simon's deals in new style sushi, combining traditional Japanese offerings with the accumulated nuances of American sushi sensibility, and the menu is similarly haphazard, acting more as a basic guideline of what's generally available than a full account; the waiter (often Chuang's wife) is likely to suggest experimental dishes based on whatever fresh food fodder the kitchen has managed to acquire that day.

Tiny, consistently crowded, and doing a brisk business in selling unusual-sounding items to hip young urban professionals, Yutaka's Uptown dining space embodies every sushi bar stereotype in the book - and aside from the cramped quarters and inevitable waits, this is generally a good thing. The classic Japanese menu is speckled with such relative rarities as mackerel sashimi, freshwater eel crepes, and tempura whole baby octopus, with the offerings rounded out with a variety of rolls ranging from the usual California to the uncommon Philadelphia.

Catering mostly to hip North Dallas professionals, Kampai seems to stake its success on the sheer improbability of its signature dishes, as well as the more subtle variances on everything else. Teriyaki and other familiar dishes can be found and mixed along with any sushi order. Sushi Zone also serves up vegetarian sushi for those who are even more conscientious about what they eat. Tuna tataki is possibly one of the most popular and immaculate dishes eaten. Among beer and wine, Sushi Zone also serves a great selection of sakes. The restaurant seems very hygienic amid the white, fresh tablecloths and flourishing greenery.

Lobster tends to be the winner at the sushi bar, but the other traditional favorites are not ignored. The dιcor is definitely Asian and definitely contemporary. The restaurant also hosts a sake bar in the back. Valet is available or you can park your own vehicle in the underground garage. Reservations are also welcomed.

Deep Sushi is also dimly lit for that seclusion within the crowd.

Though skeptical, the chef and staff take beautiful care of the dishes presentation as well as character in being edible. Gracing the sushi-sashimi station is octopus, yellowtail, surf clam, tuna and snapper. As with that of other Japanese restaurants, they also offer up cooked favorites for those not so fond of the raw cuisine of sushi. Tokyo One has a great modern dιcor with wonderful strategic lighting.
